Creamy Carrot Soup

The first time I thought of preparing a raw vegan soup, I ask myself several questions as to how possible this could be. But upon arguing several times with myself, I gathered the courage since I love adventure to and tried something soupy.

It also turns out to be a spark to the body. From the day I tried raw soup till now, I have never looked back, especially the way it helps keep the body warm and active all day. Without much a say, let’s sneak to the uncooked kitchen and see what’s possible in the world of raw veganism.

Ingredients:

2 Carrots (juiced)

1 Avocado (halved)

1 Cherry Tomato (chopped)

1 finger ginger (peeled and chopped)

Cilantro/Lettuce (chopped)

Pinch of Sea Salt (optional)

Onion (sliced)

1 tsp tahini

½ cup water

½ Cayenne powder

½ tsp paprika

½ slightly ripe crunchy papaya(chopped)

Preparation:

In a blender, pour in your carrot juice, water, paprika, cayenne, cherry tomato,(optional salt) and blend till smooth. Now add ½ avocado and tahini to the ingredients in the blender and blend once more. Pour the blend into a bowl, add the chopped papaya, onion, cilantro and ½ chopped avocado and serve.
